I see where we can AND variables, but how about OR?

You can add a second automation rule to handle the OR clause.

Got it, thanks. I was looking for it to be in the same rule to keep it easy to read when 6 months from now I look at it again and try to figure out what I was thinking...

I haven't come up with a clean, intuitive, user interface mechanism for handling the mixing of AND and OR conditions. Multiple ANDs and ORs by themselves are easy. Starts to rapidly get tricky when they get mixed.
